"Going for wines", according to tradition and to text of our culture, is from ancient times, one of most ancient customs, and it is maintained today too; the reason of its permanency is something more than the simple and pure rechearch of a goood glass of wine or of a trip into the country. Before taking our wines into consideration, we want to give some small advice to whom, who want to have a wines' reserve in its wine cellar for its taste and for that of its guests.
keep your wines bottles always laid down, so that cork is wet and always elhastic. The ideal wine cellar is dark and cool in summer and winter with a good rate of umidity. To avoid that labels deteriorate for humidity, wrap bottle in paper tissue. It is not always necessary to uncork red wines many hours before drinking: oldest wines, above all, can feel the effect of a too long oxygenation. So, we advice to drink, if possible, a bottle in a time, if it is not possible, put remained wine in a smallest bottle and cork; the real enemy of wine is oxygen! When you just open bottle, smell cork: if it smells of cork wine could be compromised; if it has not bad odour, wine will be excellent.
