ago to work and cook hunting
meats. They have always more
and more improved taste, to
let people feel tastes of real
game, not from breedings, but
came from natural parks (as
Migliarino, Massacciuccoli,
S.Rossore)and from tuscan maremma,
which is also the place of noble
families who consider hunting
a real passion in the respect
of nature. Fresh meats' work
(wild boar, buck, deer, hare,
wild duck, pheasant, etc) is
finalised to the production
of sauces, stews, patés and
salted meats. The result is
a very specialised and selected
production.
