This sweet aliment given us from nature contains, in its total form, an hundred of different substances as sugar, proteins, organic acid, mineral salts, vitamins, enzymes and hormones. Honey is used in cakes' preparation, but we must remember that some of its properties are lost during its heating. It is an energetic and revitalising aliment, ideal in childrens' and old peoples' diet. It is wholesome, genuine and its properties are recognised also from popular tradition. Production and harvesting of this honey is made by beehives' transhumance, from tuscan maremma's hills to Pistoia and Lucca's hills exploiting best flowerings.
